Food for the Soul: Italian Turkey Stew

Italian turkey stew

1 package italian turkey sausage or ground turkey-must add italian seasoning if use this
1 onion
2-3 cloves garlic-depending on how much you like garlic
1 cubed sweet potato
1 cubed butternut squash or other seasonal squash (butternut is my favorite)
1 28 oz can crushed tomatoes
1 teaspoon ground cumin
1 teaspoon ground fennel
1 15 oz can of chick peas (drain and rinse before adding)
1 box chicken broth
extra virgin olive oil

add olive oil to big soup pot brown onions and garlic
add seasonings to ground turkey or add italian turkey sausage cook until brown
add tomatoes, sweet potato, squash, spices, chick peas, chicken broth and cook until vegetables are tender

for easier cutting of butternut squash- stab/ pierce around it with a fork and bake at 350 until it turns a more brownish color (30 minutes for small squash, 45-60 minutes for large squash almost the size of a 2 liter bottle)
